Fused oils are made by crushing whole olives together with fresh fruit, herbs, or vegetables at the moment of pressing — the flavor is pressed in. Infused oils add natural flavorings to already-pressed oil. Fused oils tend to have a deeper, more integrated flavor. We carry both.
